| Parmigiano Reggiano
D.O.- This regal cheese is one of the most underrated
cheeses in the world - because of the many inferior copies, the granas
and the dust that passes as grated parmesan people forget what the
real thing is like. Once you have tasted this one there is no turning
back. Aged between 28 and 30 months it is deliciously fruity (a clear
taste of pineapples) with a pronounced tang and a delicate crunch.
Perfect served as little gold nuggets after dinner with honey. Serve
with well-knit, full bodied wines. Official

| Gorgonzola D.O.–
This sweet milky blue from Italy is made from cow’s milk and
always has a gentle bluing. While sweet, it is also quite pungent
at room temperature - another versatile cheese that stands up well

| Taleggio - D.O.
- This semi-soft Italian cheese is more than meets the eye,
its initial mildness gives way to a fruity fullness of flavour. The
texture buttery, melting nicely in the mouth. Often used in cooking
it is just as commonly seen on the cheese board. Very versatile when
