Knockanore - This rich
smoked cheddar-style cheese is made in Co. Waterford by the Lonergans.
The raw milk used is that of their own pedigree herd. It has a rich

Ardrahan - A full-flavoured typical
washed-rind cheese which, when young, has a delicate salinity and
pleasantly tart chalky interior becoming gorgeously soft beneath the
rind. As it gets more mature the flavour becomes more pronounced and
the interior completely soft and irresistible. In her beautiful old
farmhouse Mary Byrnes spoils her guests with tea and homemade brown
bread with Ardrahan and marmalade – an unlikely but remarkably

Milleens - Made in the remote Beara Peninsula in
West Cork there is no denying that the wildness of this terroir influences
Milleens, as does the eccentricity of its maker, Veronica Steele.
It has an attractive pink/orange rind, depending on the time of year,
and, again depending on time of year/mood of the cheesemaker/age of
the cheese, it can have a chalky pale pink interior, or an oozing
softness. But it always has a full-on, boozy, fermented fruit, stinky
unmistakable flavour. A truly fantastic cheese. €1.90/100g |
