| Laguiole A.O.C. - Sometimes referred
to as Fourme de Laguiole, it is made in the Aubrac mountains in Aquitaine.
An imposing big cylinder with a beautiful red stamp bearing its name,
it is the center of attention in any cheese shop. Very like Cantal
and Cheddar, but falls between the two in terms of strength in taste.
Production is small compared to Cantal and it is never made with pasteurized
milk. Enjoy it with a strong red wine and some crusty bread and butter.

| Ossau Iraty A.O.C. - This precious
sheep's milk cheese is typical of the Basque Pyrenees. When it is
in good shape it is has a unique rich, smooth pate, and an irresistibly
sweet flavour. It has a natural, brushed rind and a gorgeous ivory-coloured
pâte. It won its A.O.C. stamp in March 1980. €3.00/100g |
| Pyrénées Cantal A.O.C. -
Cantal is very like cheddar, but a little bit 'spongier'
in texture. In the cheesemaking process the curds are piled on top
of one another to expel the whey, giving the matured cheese a dry
body, with some springiness. It omes in big truckles weighing around
40k. Made in the French Auvergne from The taste is fruity and quite
mild, I can eat a lot of this cheese. Great with a Côtes-du-Rhône.
